A hearty, protein-packed veggie chilli that even meat-eaters will love. Smoky, spiced, and full of flavour.

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, crushed
  • 2 peppers (any colour), diced
  • 400g tin chopped tomatoes
  • 400g tin kidney beans, drained
  • 400g tin black beans, drained
  • 400g tin chickpeas, drained
  • 2 tbsp tomato puree
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 1 tsp dried oregano
  • 200ml vegetable stock
  • Salt and pepper

Method

  1. Place all ingredients in the slow cooker and stir well.
  2. Cook on Low for 6-8 hours or High for 3-4 hours.
  3. Taste and adjust seasoning.
  4. Serve with rice, in wraps, or with jacket potatoes and sour cream.

Tips

The three types of beans give this a great mix of textures. Top with avocado, coriander, and a squeeze of lime.
