Ingredients
- 400g tin chopped tomatoes
- 400g tin kidney beans, drained
- 400g tin black beans, drained
- 1 courgette, diced
- 2 peppers, diced
- 1 onion, diced
- 3 cloves garlic, crushed
- 1 sweet potato, cubed
- 2 tbsp tomato puree
- 200ml vegetable stock
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp chilli powder
- Salt and pepper
- Rice, to serve
Method
- Add all the vegetables to the slow cooker.
- Add the drained beans.
- Mix the tomatoes, tomato puree, stock, and spices. Pour over everything.
- Stir well.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Season to taste. Serve with rice, sour cream, and grated cheese.
Tips
Add a square of dark chocolate in the last 30 minutes for a rich, deep flavour.
