Ingredients

  • 400g tin chopped tomatoes
  • 400g tin kidney beans, drained
  • 400g tin black beans, drained
  • 1 courgette, diced
  • 2 peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 1 sweet potato, cubed
  • 2 tbsp tomato puree
  • 200ml vegetable stock
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • Salt and pepper
  • Rice, to serve

Method

  1. Add all the vegetables to the slow cooker.
  2. Add the drained beans.
  3. Mix the tomatoes, tomato puree, stock, and spices. Pour over everything.
  4. Stir well.
  5. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  6. Season to taste. Serve with rice, sour cream, and grated cheese.

Tips

Add a square of dark chocolate in the last 30 minutes for a rich, deep flavour.
