Spiced potatoes with spinach — a classic Indian side dish that works brilliantly as a main with rice or naan.
Ingredients
- 500g potatoes, peeled and cubed
- 1 onion, diced
- 3 cloves garlic, crushed
- 400g tin chopped tomatoes
- 200g fresh spinach
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp chilli powder
- 100ml water
Method
- Place potatoes, onion, garlic, and tomatoes in the slow cooker.
- Add all spices and water.
- Cook on Low for 4-5 hours until potatoes are tender.
- Stir in the spinach until wilted.
- Serve as a side or as a main with rice and naan.
Tips
This is traditionally a side dish but it’s hearty enough as a main meal with rice. Add paneer cubes for extra protein.
