Pork and Cider Stew

A West Country classic — pork shoulder slow-cooked in cider with mustard and apples.

Ingredients

  • 600g pork shoulder, cubed
  • 1 onion, sliced
  • 2 apples, peeled and chunked
  • 300ml dry cider
  • 100ml chicken stock
  • 1 tbsp wholegrain mustard
  • 2 tsp thyme
  • 2 bay leaves
  • Salt and pepper
  • Mash, to serve

Method

  1. Brown the pork. Place in the slow cooker.
  2. Add onion and apples.
  3. Mix cider, stock, and mustard. Pour over.
  4. Add thyme and bay leaves.
  5. Cook on LOW for 8 hours.
  6. Remove bay leaves, season, and serve with mash.

Tips

Use a proper dry cider, not the sweet stuff. Thatchers Gold or similar works well.
