Ingredients
- 600g pork shoulder, cubed
- 1 onion, sliced
- 2 apples, peeled and chunked
- 300ml dry cider
- 100ml chicken stock
- 1 tbsp wholegrain mustard
- 2 tsp thyme
- 2 bay leaves
- Salt and pepper
- Mash, to serve
Method
- Brown the pork. Place in the slow cooker.
- Add onion and apples.
- Mix cider, stock, and mustard. Pour over.
- Add thyme and bay leaves.
- Cook on LOW for 8 hours.
- Remove bay leaves, season, and serve with mash.
Tips
Use a proper dry cider, not the sweet stuff. Thatchers Gold or similar works well.
