Gammon in Coca-Cola

Sounds odd, tastes incredible. The Coca-Cola makes the gammon unbelievably tender and sweet.

Ingredients

  • 1.5kg gammon joint (unsmoked)
  • 1 litre Coca-Cola (not diet)
  • 1 onion, halved
  • 6 whole cloves
  • 2 bay leaves
  • 1 tsp black peppercorns
  • For the glaze (optional):
  • 3 tbsp honey
  • 2 tbsp wholegrain mustard

Method

  1. Place the gammon in the slow cooker.
  2. Stud the onion halves with the cloves and add them in.
  3. Add the bay leaves and peppercorns.
  4. Pour over the Coca-Cola until the gammon is mostly covered.
  5. Cook on LOW for 8 hours or HIGH for 5 hours.
  6. If glazing: remove the gammon, peel off any skin, and score the fat in a diamond pattern. Mix honey and mustard, spread over the fat, and grill for 10-15 minutes until sticky and golden.
  7. Slice and serve hot or cold.

Tips

This is brilliant at Christmas as an alternative to turkey. Leftovers make fantastic sandwiches.
