An Anglo-Indian classic — a spiced, creamy lentil soup with a hint of apple. A real hidden gem.

Ingredients

  • 150g red lentils, rinsed
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 carrots, diced
  • 1 eating apple, peeled and diced
  • 200ml coconut milk
  • 800ml chicken or vegetable stock
  • 1 tbsp mild curry powder
  • 1 tsp turmeric
  • Juice of 1 lemon
  • Salt and pepper

Method

  1. Place lentils, onion, garlic, carrots, and apple in the slow cooker.
  2. Add stock, curry powder, and turmeric.
  3. Cook on Low for 6-8 hours.
  4. Stir in coconut milk and blend until smooth.
  5. Add lemon juice and season.
  6. Serve with naan bread or crusty rolls.

Tips

Mulligatawny means ‘pepper water’ in Tamil. The apple might seem odd but it adds a subtle sweetness that works beautifully.
