Ingredients
- 150g red lentils, rinsed
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 carrots, diced
- 1 eating apple, peeled and diced
- 200ml coconut milk
- 800ml chicken or vegetable stock
- 1 tbsp mild curry powder
- 1 tsp turmeric
- Juice of 1 lemon
- Salt and pepper
Method
- Place lentils, onion, garlic, carrots, and apple in the slow cooker.
- Add stock, curry powder, and turmeric.
- Cook on Low for 6-8 hours.
- Stir in coconut milk and blend until smooth.
- Add lemon juice and season.
- Serve with naan bread or crusty rolls.
Tips
Mulligatawny means ‘pepper water’ in Tamil. The apple might seem odd but it adds a subtle sweetness that works beautifully.
