Chicken Fajita Filling

Ingredients

  • 4 chicken breasts
  • 2 peppers, sliced
  • 1 onion, sliced
  • 400g tin chopped tomatoes
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • ½ tsp oregano
  • Juice of 1 lime
  • Salt and pepper
  • Tortilla wraps, sour cream, cheese, to serve

Method

  1. Place the sliced peppers and onion in the slow cooker.
  2. Lay the chicken breasts on top.
  3. Mix the chopped tomatoes with all the spices and pour over.
  4. Cook on LOW for 5-6 hours or HIGH for 3 hours.
  5. Remove the chicken and shred with two forks.
  6. Return the chicken to the slow cooker and stir. Squeeze in the lime juice.
  7. Serve in warm wraps with sour cream, grated cheese, guacamole, and salsa.

Tips

This filling also works brilliantly in nachos, quesadillas, or on top of rice bowls.
