Ingredients
- 4 chicken breasts
- 2 peppers, sliced
- 1 onion, sliced
- 400g tin chopped tomatoes
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chilli powder
- 1 tsp garlic powder
- ½ tsp oregano
- Juice of 1 lime
- Salt and pepper
- Tortilla wraps, sour cream, cheese, to serve
Method
- Place the sliced peppers and onion in the slow cooker.
- Lay the chicken breasts on top.
- Mix the chopped tomatoes with all the spices and pour over.
- Cook on LOW for 5-6 hours or HIGH for 3 hours.
- Remove the chicken and shred with two forks.
- Return the chicken to the slow cooker and stir. Squeeze in the lime juice.
- Serve in warm wraps with sour cream, grated cheese, guacamole, and salsa.
Tips
This filling also works brilliantly in nachos, quesadillas, or on top of rice bowls.
