Ingredients

  • 400g tin kidney beans, drained
  • 400g tin black beans, drained
  • 400g tin butter beans, drained
  • 400g tin chopped tomatoes
  • 1 onion, diced
  • 2 peppers, diced
  • 3 cloves garlic, crushed
  • 200ml vegetable stock
  • 2 tbsp tomato puree
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp oregano
  • Salt and pepper

Method

  1. Add all the beans and vegetables to the slow cooker.
  2. Mix the tomatoes, stock, tomato puree, and spices. Pour over.
  3. Stir well.
  4. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. Season to taste. Serve with rice, wraps, or jacket potatoes.

Tips

Top with avocado, a squeeze of lime, and fresh coriander for the full experience.
