Ingredients
- 400g tin kidney beans, drained
- 400g tin black beans, drained
- 400g tin butter beans, drained
- 400g tin chopped tomatoes
- 1 onion, diced
- 2 peppers, diced
- 3 cloves garlic, crushed
- 200ml vegetable stock
- 2 tbsp tomato puree
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp oregano
- Salt and pepper
Method
- Add all the beans and vegetables to the slow cooker.
- Mix the tomatoes, stock, tomato puree, and spices. Pour over.
- Stir well.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Season to taste. Serve with rice, wraps, or jacket potatoes.
Tips
Top with avocado, a squeeze of lime, and fresh coriander for the full experience.
