A classic French vegetable stew. Gorgeous colours, gorgeous flavour, and almost no effort.
Ingredients
- 1 aubergine, diced
- 2 courgettes, diced
- 2 peppers (red and yellow), diced
- 1 onion, diced
- 3 cloves garlic, crushed
- 400g tin chopped tomatoes
- 2 tbsp tomato puree
- 1 tbsp olive oil
- 1 tsp dried herbes de Provence (or mixed herbs)
- Pinch of sugar
- Salt and pepper
- Fresh basil to serve
Method
- Place all the chopped vegetables in the slow cooker.
- Add the tinned tomatoes, tomato puree, olive oil, herbs, and sugar.
- Stir gently to combine.
- Cook on Low for 6-8 hours.
- Season to taste and serve with crusty bread, over pasta, or with grilled fish or chicken.
Tips
Ratatouille is even better the next day. Make it ahead and reheat — the flavours only improve.
