Smoky, sweet, tender pulled pork that shreds with a fork. Brilliant in rolls, wraps, or on its own with slaw.
Ingredients
- 1.5kg pork shoulder (bone-in or boneless)
- 1 onion, quartered
- 150ml BBQ sauce
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 100ml cider or apple juice
- Salt and pepper
Method
- Mix the brown sugar, paprika, garlic powder, onion powder, cumin, salt, and pepper. Rub all over the pork.
- Place the onion in the bottom of the slow cooker.
- Sit the pork on top. Pour the cider or apple juice around it.
- Cook on Low for 9-10 hours until the meat pulls apart easily.
- Remove the pork, shred with two forks, and mix with the BBQ sauce and some of the cooking juices.
- Serve in soft rolls with coleslaw.
Tips
Don’t skip the rub — it creates an incredible crust of flavour. Leftovers freeze brilliantly for quick midweek meals.
