Ingredients
- 8 boneless chicken thighs
- 200ml BBQ sauce
- 1 onion, finely diced
- 2 cloves garlic, crushed
- 1 tbsp smoked paprika
- 1 tbsp brown sugar
- 1 tbsp cider vinegar
- 100ml chicken stock
Method
- Place the chicken in the slow cooker.
- Mix all other ingredients and pour over.
- Cook on Low for 6-8 hours.
- Shred with two forks and mix back through the sauce.
- Serve in brioche rolls with slaw.
Tips
Make a big batch and freeze in portions. Pull out for quick wraps, loaded nachos, or pizza topping.
