Shredded BBQ chicken that’s perfect for rolls, wraps, nachos, or salads. Incredibly versatile.

Ingredients

  • 8 boneless chicken thighs
  • 200ml BBQ sauce
  • 1 onion, finely diced
  • 2 cloves garlic, crushed
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 1 tbsp cider vinegar
  • 100ml chicken stock

Method

  1. Place the chicken in the slow cooker.
  2. Mix all other ingredients and pour over.
  3. Cook on Low for 6-8 hours.
  4. Shred with two forks and mix back through the sauce.
  5. Serve in brioche rolls with slaw.

Tips

Make a big batch and freeze in portions. Pull out for quick wraps, loaded nachos, or pizza topping.
