Simple pork chops in a sweet onion and apple gravy. A midweek dinner that punches well above its weight.

Ingredients

  • 4 pork chops (bone-in)
  • 2 onions, sliced into rings
  • 2 eating apples, cored and sliced
  • 2 cloves garlic, crushed
  • 200ml dry cider
  • 1 chicken stock cube dissolved in 100ml water
  • 1 tbsp wholegrain mustard
  • 1 tsp dried sage
  • 1 tbsp cornflour mixed with 2 tbsp water
  • Salt and pepper

Method

  1. Place the onions and apple slices in the slow cooker.
  2. Season the pork chops and place on top.
  3. Mix the cider, stock, mustard, sage, and garlic. Pour over the chops.
  4. Cook on Low for 6-8 hours.
  5. Stir in the cornflour mixture to thicken the gravy for the last 20 minutes.
  6. Serve with mashed potato.

Tips

Bone-in chops stay juicier in the slow cooker. The apples melt into the gravy and add a lovely sweetness.
