A pub favourite made easy — chicken wrapped in bacon, smothered in BBQ sauce and melted cheese.

Ingredients

  • 4 chicken breasts
  • 8 rashers smoked back bacon
  • 150ml BBQ sauce
  • 100ml chicken stock
  • 1 tsp smoked paprika
  • 100g grated Cheddar cheese

Method

  1. Wrap 2 rashers of bacon around each chicken breast.
  2. Place in the slow cooker.
  3. Mix the BBQ sauce, stock, and smoked paprika. Pour over the chicken.
  4. Cook on Low for 5-6 hours or High for 3 hours.
  5. Sprinkle the grated cheese over the chicken, put the lid back on, and cook for 10 more minutes until melted.
  6. Serve with chips and coleslaw.

Tips

For extra smoky flavour, use a hickory or mesquite BBQ sauce. This is great with sweet potato fries too.
