Ingredients
- 1.5kg gammon joint (unsmoked)
- 1 litre cola (not diet)
- 1 onion, quartered
- 1 bay leaf
- 6 whole peppercorns
- For the glaze:
- 3 tbsp honey
- 2 tbsp wholegrain mustard
- Handful of cloves (optional)
Method
- Place the gammon in the slow cooker.
- Pour over the cola. Add the onion, bay leaf, and peppercorns.
- Cook on Low for 7-8 hours or High for 4-5 hours.
- Remove the gammon and peel off the skin, leaving a layer of fat.
- Score the fat in a diamond pattern and stud with cloves if using.
- Mix honey and mustard, spread over the fat.
- Grill for 5-10 minutes until golden and sticky.
- Slice and serve hot or cold.
Tips
This works for Christmas dinner or any time you want a special centrepiece. The cola tenderises the meat and adds sweetness without tasting of cola.
