Ingredients
- 340g tin corned beef, roughly diced
- 4 medium potatoes, peeled and diced
- 1 large onion, diced
- 1 carrot, diced
- 200ml beef stock
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- Salt and pepper
Method
- Place the potatoes, onion, and carrot in the slow cooker.
- Add the stock, Worcestershire sauce, thyme, salt, and pepper.
- Cook on Low for 4-5 hours until potatoes are tender.
- Gently fold in the corned beef and cook for another 30 minutes.
- Serve topped with a fried egg and HP sauce.
Tips
For a crispy top, transfer to a baking dish and grill for 5-10 minutes. The fried egg on top is non-negotiable.
