A nostalgic British classic. Crispy, savoury, and incredibly satisfying. Great for breakfast, lunch, or dinner.

Ingredients

  • 340g tin corned beef, roughly diced
  • 4 medium potatoes, peeled and diced
  • 1 large onion, diced
  • 1 carrot, diced
  • 200ml beef stock
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and pepper

Method

  1. Place the potatoes, onion, and carrot in the slow cooker.
  2. Add the stock, Worcestershire sauce, thyme, salt, and pepper.
  3. Cook on Low for 4-5 hours until potatoes are tender.
  4. Gently fold in the corned beef and cook for another 30 minutes.
  5. Serve topped with a fried egg and HP sauce.

Tips

For a crispy top, transfer to a baking dish and grill for 5-10 minutes. The fried egg on top is non-negotiable.
