A fragrant, mildly spiced Thai-inspired curry with tender beef, potatoes, and peanuts. Rich and comforting.

Ingredients

  • 500g diced beef
  • 3 medium potatoes, peeled and quartered
  • 1 onion, sliced
  • 400ml tin coconut milk
  • 3 tbsp massaman curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp peanut butter
  • 2 cloves garlic, crushed
  • Juice of 1 lime
  • Handful of roasted peanuts to serve

Method

  1. Place the potatoes in the bottom of the slow cooker.
  2. Add the beef and onion on top.
  3. Mix the coconut milk, curry paste, fish sauce, sugar, peanut butter, and garlic. Pour over the beef.
  4. Cook on Low for 8 hours until the beef is tender and the potatoes are soft.
  5. Stir in the lime juice. Serve over jasmine rice topped with roasted peanuts.

Tips

Massaman paste is available in most UK supermarkets. The Thai Taste brand is widely available and good quality.
