A proper hot curry for those who like it spicy. Tender beef in a rich, fiery tomato sauce.
Ingredients
- 500g diced stewing beef
- 2 onions, diced
- 3 cloves garlic, crushed
- 400g tin chopped tomatoes
- 2 tbsp tomato puree
- 3 tbsp Madras curry paste
- 1 tsp chilli powder (adjust to taste)
- 1 tsp ground cumin
- 1 tsp turmeric
- 200ml beef stock
- Fresh coriander to serve
Method
- Place the beef, onions, and garlic in the slow cooker.
- Add the tomatoes, tomato puree, curry paste, chilli, cumin, turmeric, and stock.
- Cook on Low for 8 hours until the beef is meltingly tender.
- Serve with basmati rice, naan, and fresh coriander.
Tips
Madras should have a proper kick. Start with 1 tsp chilli powder and add more at the end if you want it hotter.
