A proper hot curry for those who like it spicy. Tender beef in a rich, fiery tomato sauce.

Ingredients

  • 500g diced stewing beef
  • 2 onions, diced
  • 3 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 2 tbsp tomato puree
  • 3 tbsp Madras curry paste
  • 1 tsp chilli powder (adjust to taste)
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 200ml beef stock
  • Fresh coriander to serve

Method

  1. Place the beef, onions, and garlic in the slow cooker.
  2. Add the tomatoes, tomato puree, curry paste, chilli, cumin, turmeric, and stock.
  3. Cook on Low for 8 hours until the beef is meltingly tender.
  4. Serve with basmati rice, naan, and fresh coriander.

Tips

Madras should have a proper kick. Start with 1 tsp chilli powder and add more at the end if you want it hotter.
