Ingredients

  • 1kg beef brisket
  • 4 onions, thinly sliced
  • 3 cloves garlic, crushed
  • 300ml beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 2 tsp mustard
  • 2 bay leaves
  • Salt and black pepper

Method

  1. Lay the sliced onions in the base of the slow cooker.
  2. Season the brisket generously with salt and pepper. Place on top of the onions.
  3. Mix the stock, Worcestershire sauce, vinegar, sugar, and mustard. Pour around the brisket.
  4. Tuck in the bay leaves and garlic.
  5. Cook on LOW for 9-10 hours until the brisket is fall-apart tender.
  6. Remove the brisket and let it rest for 10 minutes. Shred or slice.
  7. Skim any fat from the onion gravy, remove bay leaves, and serve the gravy over the brisket.

Tips

Serve with creamy mash, roast potatoes, or Yorkshire puddings. The gravy is absolutely incredible.
